Apple & Almond Teacake
This recipe was hit with the family. It was made for the July 2008 NZ/Aussie recipe swap. The recipe comes from Mischka of South Australia! While eating this tasty cake - I was thinking...pineapple would be really good on top too! A rightside up pineapple cake!
1 cup butter
1 1/3 cups sugar
4 eggs
2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
2/3 cup milk (I used buttermilk - it was so moist!)
2 apples, peeled and grated
1/2 cup slivered almonds (I used sliced almonds and ran them through the food processor a bit.)
Preheat oven to 350 degrees. Spray 9x13 pan with vegetable spray.
Using an electric mixer - cream the butter and sugar in large bowl until light and fluffy. Beat in eggs until combined. Add flour, baking powder and salt and milk. Mix very well.
Pour into prepared pan. Sprinkle evenly with the apples then top with almonds.
**Side note - I also sprinkled the top of the cake with cinnamon-sugar before popping it in the oven.
Bake for about 45 minutes.
